Ingredients:
1/2 a bag of shredded coconut
1/2 a cup of chocolate chips (Enjoy Life)
1 can of sweetened condensed coconut milk (Natures Charm)
1/2 a cup of butter (Earth Balance) and a little extra for the pan
1 box of graham crackers (365 Everyday Value)
3 tsp of cinnamon (optional)
Directions:
Preheat your oven to 375 F
In a food processor blend the graham crackers until they are a fine powder. (This is the easiest way, but you can crush them by hand or buy graham cracker crumbs)
Melt the butter and add it slowly to the graham cracker crumbs WHILE THE FOOD PROCESSOR IS RUNNING. This will mix the ingredients together very well.
Butter a baking dish. (I used a glass casserole dish)
Add the graham cracker crumbs and butter combination to the buttered dish and press into the pan, creating a crust.
Pour the can of sweetened condensed coconut milk on top of the crust and spread it around evenly.
Add the shredded coconut on top of the sweetened condensed coconut milk and press them into it.
After you’ve added the coconut, add the chocolate chips on top of it! Press the chocolate chips into the coconut shreds.
This last step is optional! Sprinkle cinnamon on the top. The combination of cinnamon, coconut and chocolate is INCREDIBLE. I would suggest trying it, but if you’re not a cinnamon fan just leave it out!
Bake in the oven until the coconut shreds turn a beautiful golden brown!
Notes:
The sweetened condensed coconut milk will thicken and get very sticky while it is cooling. This is how the bars are held together.
The sweetened condensed coconut milk is very sweet, so no additional sugar is needed!
