Gingerbread Nice-Cream

Yes, I said NICE-cream... you read that correctly. This dessert will give you ALL the ice-cream feels but you don't have to feel guilty about giving it to your children or eating it for yourself. It's made out of frozen bananas! There's only 4 simple ingredients to make this nice-cream and, I promise you, it's amazing.

Ingredients:

  • 8 bananas

  • 6 gingerbread cookies

  • 2 tbsp sugar

  • 1 tbsp cinnamon

Directions:

  1. Peel your bananas and cut them into chunks.

  2. Place them in a dish that will store well in the freezer.

  3. When your bananas are frozen, take them out and let them thaw SLIGHTLY. You'll want to be able to break a few apart so they fit easily in the food processor.

  4. While your bananas are thawing, shredded 6 gingerbread cookies in the food processor until they are pretty finely chopped. (Leave bigger chunks if desired)

  5. Set the gingerbread aside and put the banana in the food processor.

  6. While pulsing/ shredding, you'll notice that it starts to get creamy and become the consistency of slightly melted ice cream (THAT'S WHAT YOU WANT!)

  7. Add your cookies, cinnamon and 2 tbsp of sugar to the processor and pulse until combined. (You may have to fully mix outside of the processor)

  8. Add to dish that will store well in the freezer and freeze until you're ready to eat!

  9. ENJOY!
