Ingredients:
4 chicken breast
2 cups of broccoli
1 small onion
2 cups raw mushrooms
1/2 cup shredded carrots
1/2 cup NO SOY soy sauce (Ocean Halo)
1/2 cup orange marmalade
2 tbsp BBQ sauce
3/4 cup of vegetable broth
1/4 cup all purpose flour (coating the chicken)
2 tbsp vegetable oil
1 tsp cornstarch (for thickening sauce)
2 tsp fresh garlic
2 tsp fresh ginger
Red pepper flakes to taste
Salt and pepper to taste
Sesame seeds (I used black sesame seeds, but you can use whatever you like)
Green onions to top
Directions:
Chop of all of your vegetables and add them to a pan with 1 tsp fresh ginger, 1 tsp garlic, salt, pepper, red pepper flakes, 1/4 cup vegetable broth, 1 tbsp NO SOY soy sauce and 1/4 cup of water. Steam the vegetables on low until they are tender.
Cut your chicken into chunks and coat them in flour (1/4 cup should be enough) and fry them on medium-high heat in a pan with 2 tbsp of vegetable oil until they are golden brown.
While your chicken is cooking, you can start the sauce!
In a sauce pan, add 1/2 cup NO SOY soy sauce, 1/2 cup orange marmalade, 2 tbsp BBQ sauce, 1/2 cup vegetable broth, 1 tsp fresh garlic and 1 tsp fresh ginger, red pepper flakes, salt, pepper and black sesame seeds.
Add a little cornstarch to the sauce to thicken it. You can mix the cornstarch with hot water and then add it to be sure there are no clumps. I used 1 tsp cornstarch with 4 tbsp hot water. Simmer the sauce until it is thick enough to stick to your spoon. Add a little of the cornstarch mixture at a time to be sure you don't over thicken your sauce.
Once your sauce is finished, add the cooked chicken! Serve the chicken with the steamed vegetables and top with green onions and black sesame seeds!
There you have it! This entire dish is 1,504 calories and serves 4 people, making each serving 376 calories! Talk about a LOW calorie, filling and delicious dinner! You'll feel like you're having a cheat day, but you're not!
