Skinny Lemon Poppyseed Mug Cake

A perfect low calorie snack or dessert. I struggle with the sweets when I'm watching my calories, so I decided to make it so I can still enjoy the things I love.


Ingredients:

  • 1/4 cup + 2 tbsp of all purpose flour

  • 1/4 cup of vanilla almond milk

  • 1 egg white (small egg) (use 2 tbsp of egg white if you only have a large egg)

  • 1 tsp of lemon zest

  • 1 tbsp of fresh lemon juice

  • 1/2 tsp vanilla extract

  • 2 tbsp of munkfruit sugar

  • 1 tsp baking powder

  • 2 tsp poppyseeds

Topping:

  • 1 tbsp swerve confectioners sugar replacement

  • 1/2 tsp almond milk (you may need more, depending on the consistency you desire)

  • Pecans (optional)

Directions:

  1. In a microwave safe mug, add the dry ingredients into the mug and mix well. (Flour, munkfruit sugar, baking powder and poppyseeds)

  2. Add the wet ingredients into the mug and mix until combined. (almond milk, egg white, lemon juice, lemon zest and vanilla)

  3. Microwave in 30 second intervals until cake is finished (There will be no wet batter on the top)
