Skinny Taco Bake

The combination of sweet potato and tacos... it's literally the best and if you haven't tried it, you need to RUN to your kitchen and make this. Not only is this a skinny meal... it's incredibly easy to make and it does not lack in the flavor department. This recipe serves 5 and each serving is only 350 calories!!


Ingredients:

  • 5 cup (133g), Sweet Potatoes

  • (Cubed)

  • 1 lb, Ground turkey

  • 0.50 cup, chopped, Red onion

  • 1 tbsp, Olive Oil

  • 2 tsp cumin

  • 1 tsp chili powder

  • 1 tsp red pepper flakes

  • 1 tsp oregano

  • 1 tsp minced garlic

  • Salt and Pepper, to taste

  • 1/3 cup, beef broth

  • 0.50 cup, Cherry tomatoes

  • 3 whole stalk (4-5"), Green Onion - Whole

  • 0.50 cup, shredded, Cheddar cheese

  • 0.50 cups, Iceberg Lettuce

  • 0.50 cup, Tortilla Strips

  • 1 tbsp, Cilantro


Directions:

  1. Pre heat your oven to 400 degrees.

  2. On the stove, cook your ground turkey with 1 tbsp of olive oil, 2 tsp cumin, 1 tsp chili powder, 1 tsp red pepper flakes, 1 tsp oregano, 1 tsp minced garlic, salt, pepper and 1/4 of a cup of diced red onion. Cook until meat is cooked through.

  3. While your ground turkey is cooking on the stove, peel and cube your sweet potatoes. You will need roughly 5 cups of cubed sweet potatoes (I used 1 large and 1 medium sweet potato).

  4. Put the cubed potatoes in a baking dish and add salt, pepper and 1/3 cup of beef broth.

  5. When your meat is finished cooking, pour the mixture in the baking dish with the potatoes and stir them together.

  6. Cover with foil and bake until your sweet potatoes are tender. You'll want to stir them a few times during the cooking process.

  7. After this is cooked, layer on the top with shredded lettuce, cheddar cheese, tortilla strips, cilantro, tomatoes and green onions!
