Star Spangled Fruit Caprese

Um... YUM! That's all I have to say about this one you guys.



Ingredients

  • 2 Red Apples

  • 3-4 Plums

  • 1 package of mozzarella (8oz)

  • 1-2 tbsp of pomegranate seeds

  • 1/3 of a cup of blueberries

  • 1/2 tbsp of balsamic Vinegar

  • 1/2 tbsp of honey

  • Juice from 1/2 a small lime

  • 2 tbsp olive oil

  • Fresh basil







Directions

  1. Slice your plums, apples and mozzarella. Layer them in a pattern of apple, plum, mozzarella on a serving tray.

  2. Sprinkle the blueberries and pomegranate seeds on the top layered apple, plum and mozzarella.

  3. In a separate bowl, add the honey, lime juice and balsamic vinegar. Stir them together to combine and then slowly add in the olive oil while stirring (like you're making a salad dressing). Spoon this mixture all over the top of the fruit and mozzarella.

  4. Garnish with fresh basil by ripping the leaves and sprinkling them over the top.
